Citrus Tossed Arugula with Grilled Shrimp

This is one of the easiest recipes, and It always brings me back to a meal that I had in Portofino. All you need is some fresh arugula, shrimp, lemon, olive oil and parmesan to whip this up!

In a hot frying pan seasoned with oil, place your shrimp down. Cook just until there’s a good amount of color, and the shrimp isn’t translucent anymore. To make the dressing, in a small bowl add 1 tsp olive oil, and the juice of half a lemon. Combine well, and add salt to taste. Mix dressing in with arugula, and then plate. Add the shrimp, and shavings of parmesan!
