Papas Con Chile

One thing that my closest friends and family know about me is that I am OBSESSED with chips. Barbecue, Sour Cream + Cheddar, Jalapeño, like I am seriously into it. So when we arrived to mexico, gabe was really excited about getting me papas con chili. Little did he know by introducing me to this ridiculously amazing food item, he in turn, created a monster.

Papas con chili are a staple. When I post photos on social media of it, my mexican friends comment words like, “I’m salivating.” or “omg, give them to me nowwwww.” Sure, they sell them at the markets, where you get the big bag of chips with little packets of hot sauce inside, but the real way to do it is find a cart. They provide fresh, and I mean fresh cooked papas, salsa that varies in temperature, and to top it of, the most important, lime.
